Breakfast Bowl Recipe

Anndd I’m back with the summer blogging! Yes, I am calling it summer even though it does not look or feel like it right now with this cloudy, chilly weather (and the fact that it isn’t really officially summer until June..). So what better way to beat Toronto’s strange weather and also feel energized at the start of your day than to eat a delicious, nutrient-dense breakfast bowl that’s quick and easy to make?

After making a couple different versions of it, I’ve realized that no recipe really exists for this, despite what the title of this post might suggest. A breakfast bowl is very much individualized and unexact that even for someone like me -who lives by measuring things to the smallest detail -can make this without thinking twice about whether my measurements are off or not. Once you make the base, adding whatever toppings and how much of each is completely up to your own preference. So without further ado, let’s get to it!

Processed with Rookie Cam

Berry Base:

1 cup frozen blueberries

1 cup frozen strawberries, peaches, or mango

1/2 banana (save the other half to use as a topping)

1 cup coconut milk (can be substituted with any other milk)

1 tablespoon of flax seed

1 teaspoon of vanilla extract

3/4 cup of spinach

Some of my favourites are fresh berries, unsweetened coconut flakes, chia seeds, granola, cacao nibs, nuts/seeds, and a spoonful of almond butter. But really, the possibilities are endless!

Blend together all the ingredients for the Berry Base. The blended mixture may be a bit thick when you first start to blend it, so you may want to stir it with a spoon a few times in between. You can also change up the proportions of each ingredient to your liking -especially if you prefer the base to be more of a thick or liquid consistency, you can adjust the amount of coconut milk added. Once you’ve blended together the berry “smoothie” and poured it into a bowl, go ahead and add the toppings in whatever proportions you so please and voilà -you’ve got yourself a bowl full of deliciousness packed with tons of nutrients! Hope you all enjoy this recipe as much as I do and happy breakfast bowl assembling 🙂
